Spaghetti Bolognese 

When I first considered going vegan i thought the was no way I could give up my favorite meal in the whole world spaghetti bolognese. Not only was it my favorite it was a dinner the whole family loved. We have tried a few different versions since I went vegan and this our favorite even Master 7 loves it. So without further ado here is the recipe for a delicious hearty family favorite..

Ingredients 

2 tbsp. of olive oil

1 onion diced

1 large carrot chopped

2 tsp of minced garlic (you can use fresh)

2 tbsp. of italian herbs

1 cup of vegetable stock

1 cup of soy protein (dry)

2 cans of diced tomatoes

1 small can of tomato paste

Salt

Pepper

2 cups of chopped mushrooms

500g gluten free spaghetti

 

In a large pot heat the olive oil then place carrots and onions in the pot and heat for 5 minutes.

Add the italian seasoning and salt and pepper.

Add the mixed garlic for about a minute then add the soy protein and the vegetable stock.

Stir then simmer for a minute add the tomato paste mix well.

Add the cans of diced tomatoes and bring it to the boil on medium heat then add mushrooms.

Then simmer for 10 minutes.

Cook the pasta to packet directions and then drain.

Serve the pasta in a bowl and top with the bolognese.

Cooking time 30 minutes Serves 6

Vegan Carrot Muffins

If there is something we like in this house it’s carrots. We will eat carrots anyway we can. Roasted, boiled, raw, mashed and in carrot cakes. Master J is the biggest fan or carrots I know and he loves helping to make carrot cake just so he can eat the chunks left over after grating, and if we making something that involves carrots you will find him hovering around the chopping board. This time I choose to make muffins instead of cake and hoping to cut down on the sugar we would normally add to them. The bonus is the muffins are also gluten free.

Creamy Garlic Pasta

I’m always on the lookout for yummy vegan recipes and adapting recipes to make them vegan. This pasta dish is so creamy that it’s hard to believe there is no cream in it. Unfortunately it doesn’t make for pretty pictures but makes up for it in taste. We used gluten free spiral pasta which I think is best for this recipe as they don’t clump together as some of long pastas do.  The recipe below serves five to six people. This dish can be all done in one pot which is great because who loves doing dishes?

I’m Vegan My Kids Are Not

It’s no secret that I’m vegan and have been since December 2016. However my children aren’t vegans. Yes they eat a lot vegan foods since both myself and my husband are the cooks in the house and we make a lot of vegan meals. Master J being a seven year old knows mummy is vegan and knows that means I choose not to have meat and he already knows that I can’t have dairy because it makes me sick. He has declared himself not a vegan and has stated that he will not be a vegan.

My Vegan Journey

I didn’t really understand what the word vegan meant. I knew what vegetarian was and I even had a friend who claimed she was vegetarian apart from chicken and fish. But I did hear all these types of different terms relating to being a vegetarian and thought veganism is just another term meaning the same thing. When my husband’s friends invited us over dinner which i was excited about knowing they didn’t use any milk products which meant i could eat and not be afraid of accidentally consuming dairy, they mentioned they were now vegan. I thought it just meant meat and dairy were out of their diets no big deal right but I was so wrong.. Keep on reading!
