I love avocados and I love creamy dishes. Due to dairy issues and now being vegan cream is off the menu.  So I thought warm creamy dishes we gone forever. Not so people. If you love avocados and pasta this is a recipe you must try. Trust me you won’t regret it.

Ingredients

2 or 3 small avocados

1 minced clove of garlic

500g of spaghetti

1/4 cup of soy milk

1/4 cup of water

Half a cup of lemon juice

Method

Remove the pits from the avocados and dice them.

Place the avocados, lemon juice and garlic in a food processor ( I use a bullet.)

Once blended add the soy milk and water.

Once its creamy or to your desired consistency stir it through your pasta,

Add salt and pepper to taste

This is one of my favorite pasta dishes. Though my kids won’t eat it (they don’t know what they’re missing out on) it is husband approved. Its delicious and a definitely a repeat in our house.
