Orange and poppy seed cake was my favorite packet cake before I became dairy intolerant and gluten sensitive. Since then I haven’t been able to find one that meets my needs so I finally decided to make a vegan version that is also gluten free. It is six year old approved.
2 cups of gluten free self raising flour
1/4 cup of dairy free margarine softened
1/4 cup of orange juice either fresh or from a bottle
1 cup of caster sugar
1 tsp of vanilla extract
1 tsp of grated orange rind
1 cup of soy milk
1/8 cup of poppy seeds
Preheat the oven 200 degrees
Lightly grease a cake tin (I used olive oil)
Add the flour, sugar, margarine, soy milk, vanilla extract and organize juice into large mixing bowl
Using electric beaters beat for two minutes
Add in the orange rind and poppy seeds and beat again till all mixed through
Place the mixture into a cake tin and bake for about 45 minutes or until a skewer comes clean.
